A refreshing and colorful coleslaw featuring a delightful blend of green and purple cabbage, grated carrots, and a creamy tangy dressing.

Ingredients

  • 3 cups green cabbage, finely shredded
  • 2 cups purple cabbage, finely shredded
  • 1 cup carrots, grated
  • ½ cup mayonnaise
  • 1 tbsp white vinegar
  • ½ tbsp apple cider vinegar
  • 2 tsp sugar
  • ½ tsp celery seed
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, whisk together the mayonnaise, white vinegar, apple cider vinegar, sugar, celery seed, salt, and pepper until smooth.
  2. Thinly slice the green cabbage and purple cabbage. Grate the carrots.
  3. In a large bowl, add the prepared vegetables and toss them with the dressing until fully coated.
  4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to develop.

Notes

You can customize this coleslaw by adding ingredients like bell peppers, green onions, or nuts. For a lighter version, substitute mayonnaise with Greek yogurt.
