A creamy, garlicky chicken skillet that turns ordinary chicken breasts into a comforting gourmet dish.

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch thick pieces
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup low sodium chicken broth
  • 1 cup grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon dried Italian herb blend (oregano, basil, thyme, rosemary, marjoram)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering.
  2. Place the chicken pieces in a single layer, being careful not to overcrowd the pan. Sear for 3-4 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the skillet and cover loosely to keep warm.
  4. Add the remaining tablespoon of olive oil and 4 tablespoons of butter to the skillet. Once melted, add the minced garlic and sauté for 1-2 minutes.
  5. Pour in the heavy cream and chicken broth, bringing the mixture to a simmer. Stir occasionally.
  6. Reduce the heat to medium-low and stir in the grated Parmesan cheese, dried herbs, and red pepper flakes if using.
  7. Return the cooked chicken to the skillet, tossing gently to coat in the sauce. Simmer for another 2-3 minutes.
  8. Remove from heat and garnish with freshly chopped parsley, if desired.

Notes

Serve with a side salad or garlic bread. Store leftovers in an airtight container for up to three days.
