2 pieces boneless, skinless chicken breasts
3 cups baby potatoes (quartered)
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika

1/2 cup heavy cream
1/4 cup chicken broth
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 tbsp chopped parsley (for garnish)
Instructions
Toss the quartered baby potatoes in one tablespoon of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of paprika, and a pinch of salt and pepper. Spread the mixture evenly in the air fryer basket.
Air fry the potatoes at 400°F for 12-15 minutes, or until crispy and golden brown. Check occasionally to ensure they cook evenly.
Season the chicken breasts with salt, black pepper, garlic powder, and paprika. Ensure you coat both sides well.
In a large skillet over medium-high heat, heat the remaining tablespoon of olive oil. Once the oil shimmers, add the seasoned chicken breasts. Sear them for 4-5 minutes per side until they achieve a beautiful golden crust and are cooked through. Once done, remove them from the skillet and set aside.
In the same skillet, add minced garlic and sauté for about 30 seconds until it becomes fragrant. Scrape any browned bits from cooking the chicken for added flavor.
Pour in the chicken broth and heavy cream, stirring constantly. Bring this mixture to a gentle simmer, and then gradually stir in the grated Parmesan cheese. Let the sauce thicken slightly before returning the cooked chicken breasts to the skillet.
Spoon the creamy sauce over the chicken, allowing the flavors to meld beautifully.
Top the chicken with shredded mozzarella cheese and cover the skillet with a lid. Allow it to sit until the cheese melts.
Finally, gently add the air-fried potatoes to the skillet, mixing everything together. Garnish with chopped parsley before serving.
