A comforting French onion soup chicken bake featuring tender chicken breasts in rich onion gravy topped with Gruyere cheese.

  • 2 tablespoons avocado oil
  • 3 medium sweet onions, sliced
  • 35 garlic cloves, minced
  • 2 teaspoons fresh thyme, chopped
  • 1 cup beef broth
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 cup shredded Gruyere cheese
  • Fresh thyme for garnish (optional)

Instructions

  1. Heat a large oven-safe skillet over medium-high heat. Add 1 tablespoon of avocado oil and sear the chicken breasts for 2-3 minutes per side until golden-brown. Remove and cover with foil to keep warm.
  2. Lower heat to medium, add remaining oil if necessary, and cook sliced onions for 15-20 minutes until soft and caramelized.
  3. Incorporate minced garlic and fresh thyme into the onions and sauté for an additional 1-2 minutes.
  4. Pour in beef broth and balsamic vinegar, stir to combine, then season with salt and pepper.
  5. Return the chicken to the skillet, allowing it to simmer in the sauce for 15-20 minutes, flipping halfway through.
  6. Top with shredded Gruyere cheese and broil until melted and bubbly. Garnish with fresh thyme before serving.

Notes

Use a mix of onions for added complexity. Adjust balsamic vinegar to taste. Let the dish rest for a few minutes after broiling to enhance flavors.
