1 lb (500g) chicken thighs, cut into 2cm pieces
1 tablespoon butter
2 garlic cloves, crushed
1 cup cream (dairy or dairy-free)
6 tablespoons tomato paste
1 tablespoon tomato sauce (ketchup)
1 teaspoon nutmeg
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon garam masala
1/2 teaspoon salt
1 cup long grain white rice
1 1/2 cups water
1 teaspoon salt
Instructions
Start by cooking the rice. In a small pot, combine 1 cup of rice with 1 teaspoon of salt and 1 1/2 cups of water. Set over medium heat until bubbles begin to rise and reduce heat to low, covering the pot. Cook undisturbed for 12 minutes.
Meanwhile, toss the chicken pieces with nutmeg, turmeric, cumin, garam masala, and salt until evenly coated.
Heat a large frying pan over medium heat. Add the butter, letting it melt before adding the chicken. Cook for a few minutes on each side until starting to brown.
Add the crushed garlic cloves and cook for another minute, stirring through the chicken.
Stir in the tomato paste and tomato sauce, cooking for a few minutes.
Reduce heat to low, add the cream, and stir to combine. Simmer for an additional 5 minutes, stirring occasionally. Adjust salt if necessary.
Once the rice is cooked, let it sit covered for 10 minutes before fluffing.
Serve the butter chicken alongside the rice and enjoy.
