Easy Hawaiian Chicken Skewers

Delicious Hawaiian chicken skewers perfectly balancing sweet and savory flavors, ideal for barbecues or cozy dinners.

Ingredients

  • 3/4 cup pineapple juice
  • 1/2 cup coconut aminos
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 2 tablespoons Frank’s Red Hot sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 1/2 lbs chicken thighs (skinless, boneless)
  • A 20 oz can of pineapple chunks
  • 6 kabob skewers
  • Sea salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Combine pineapple juice, coconut aminos, ketchup, brown sugar, Frank’s Red Hot sauce, minced garlic, and minced ginger in a saucepan. Stir well.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-12 minutes until the sauce thickens slightly.
  3. Cut the chicken thighs into bite-sized pieces and place them in a large bowl.
  4. Add a few spoonfuls of the sauce to the chicken, seal the bag, and massage to coat evenly. Let it marinate in the refrigerator for at least an hour.
  5. Drain the pineapple chunks and cut them into pieces similar in size to the chicken.
  6. Thread the marinated chicken and pineapple onto the six skewers. Sprinkle with sea salt and black pepper to taste.
  7. Preheat the grill to medium-high heat. Cook the kabobs for 10-12 minutes, turning occasionally and brushing with the remaining sauce.
  8. Serve with the leftover sauce on the side for dipping.

Marinate the chicken longer for better flavor and ensure proper grilling technique for tender and juicy chicken.
