A simple and flavorful recipe for grilled chicken, perfect for any occasion.

  • 4 boneless chicken breasts (or 8 thighs)
  • 4 cups warm water (for brine)
  • 1/4 cup kosher salt (for brine)
  • 2 tablespoons brown sugar (for brine)
  • 2 cloves garlic, smashed (for brine)
  • 2 tablespoons olive oil (to coat chicken)
  • 1 teaspoon salt (for seasoning)
  • 1/2 teaspoon black pepper (for seasoning)
  • 1 teaspoon garlic powder (for seasoning)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Dissolve kosher salt and brown sugar in warm water.
  2. Submerge the chicken in the brine for 30 minutes.
  3. Pat the chicken dry with paper towels.
  4. Mix seasoning ingredients together and rub over the chicken, coating with olive oil.
  5. Preheat the grill to medium-high heat and oil the grates.
  6. Place the chicken on the grill and cook for 7 minutes without moving.
  7. Flip the chicken and grill for another 6 minutes or until the internal temperature reaches 165°F.
  8. Remove from the grill and let rest under aluminum foil for about 5 minutes before serving.
