  • 3 cups Italian Breadcrumbs or Panko Breadcrumbs
  • 2 tablespoons fresh parsley, finely minced
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground pepper, to taste
  • 3 large eggs
  • ½ cup all-purpose flour
  • 3 boneless, skinless chicken breasts, thinly sliced
  • Extra virgin olive oil or vegetable oil for frying

Instructions

  1. Whisk together the eggs in a shallow bowl, adding a pinch of salt and pepper.
  2. Combine the breadcrumbs, flour, garlic powder, and smoked paprika in a separate bowl. Season with salt and pepper.
  3. Slice the chicken breasts into thin pieces and pound them to ½ inch thick.
  4. Season each chicken slice with salt.
  5. Dip each chicken piece in the egg mixture, then coat thoroughly in the breadcrumb mixture.
  6. Heat the oil in a large pan over medium heat.
  7. Fry the breaded chicken cutlets until golden brown on both sides.
  8. Drain on a wire rack or paper towels.

Notes

For extra flavor, consider adding herbs such as oregano or Italian seasoning to the breadcrumb mixture. Store leftovers in an airtight container for up to three days.
