Easy Creamy Cajun Chicken Spaghetti

A delightful blend of juicy chicken, rich creamy sauce, and tender spaghetti infused with Cajun spices.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 pound spaghetti
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Optional: Red pepper flakes for extra heat

Instructions

  1. Cook the spaghetti according to the package directions in salted water until al dente.
  2. Drain the pasta and set it aside.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  4. Add the chicken pieces, coating them with Cajun seasoning and smoked paprika. Cook for 6 to 8 minutes until golden brown.
  5. Remove the chicken and set aside.
  6. Melt 4 tablespoons of butter in the same skillet over medium heat. Add minced garlic and sauté for 1 minute.
  7. Whisk in 1/4 cup of flour and cook for 1 to 2 minutes.
  8. Gradually add 3 cups of whole milk and 1 cup of chicken broth, whisking to prevent lumps.
  9. Stir in the softened cream cheese and 1 cup of mozzarella until the sauce is smooth.
  10. Add 1/2 cup of grated Parmesan and season with salt, pepper, and red pepper flakes, if desired.
  11. Return the chicken to the skillet and simmer for 2 to 3 minutes, then toss in the cooked spaghetti.
  12. Sprinkle the remaining mozzarella on top, cover, and let sit for 2 to 3 minutes until melted.
  13. Serve hot, garnished with fresh parsley or additional Parmesan.

Notes

For extra heat, adjust Cajun seasoning or add red pepper flakes. Consider marinating the chicken in Cajun seasoning and olive oil for more flavor.
