8 boneless skinless chicken thighs, cut into bite-sized pieces
1 onion, sliced
3 tbsp soy sauce
2 tbsp brown sugar
2 tbsp mirin
2 tbsp sesame oil
1 tbsp rice vinegar
1 tbsp avocado oil
1 garlic clove, minced
½ inch ginger, grated
1 tbsp gochujang paste (optional)
Instructions
In a bowl, mix the soy sauce, brown sugar, mirin, sesame oil, rice vinegar, minced garlic, grated ginger, and gochujang paste (if using) to create a marinade.
Add the chicken pieces to the bowl and coat thoroughly.
Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
Heat avocado oil in a large skillet over medium-high heat.
Add the marinated chicken and sliced onion.
Pan fry for about 8-10 minutes until the chicken is cooked through and has a caramelized exterior, with soft onions.
Serve warm.
Notes
For deeper flavor, marinate the chicken for a few hours or overnight. Avoid overcrowding the pan while cooking.
