  • 8 boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 onion, sliced
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp mirin
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp avocado oil
  • 1 garlic clove, minced
  • ½ inch ginger, grated
  • 1 tbsp gochujang paste (optional)

Instructions

  1. In a bowl, mix the soy sauce, brown sugar, mirin, sesame oil, rice vinegar, minced garlic, grated ginger, and gochujang paste (if using) to create a marinade.
  2. Add the chicken pieces to the bowl and coat thoroughly.
  3. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
  4. Heat avocado oil in a large skillet over medium-high heat.
  5. Add the marinated chicken and sliced onion.
  6. Pan fry for about 8-10 minutes until the chicken is cooked through and has a caramelized exterior, with soft onions.
  7. Serve warm.

Notes

For deeper flavor, marinate the chicken for a few hours or overnight. Avoid overcrowding the pan while cooking.
