A comforting and delicious Chicken Broccoli Casserole made with tender chicken, vibrant broccoli, and a creamy sauce topped with cheese.

  • 3 cups boneless, skinless chicken breasts, cooked and diced
  • 2 packages (10 ounces each) frozen broccoli cuts, cooked and drained
  • 2 cans (10-3/4 ounces each) 98% fat-free cream of chicken soup
  • 3/4 cup non-fat evaporated milk
  • 1 teaspoon lemon juice
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup Italian-flavored dry bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F. Grease your 9×13-inch baking dish with cooking spray.
  2. Cook the frozen broccoli until it’s tender and then drain any excess liquid.
  3. In a large mixing bowl, combine your cooked and diced chicken with the tender broccoli.
  4. In another bowl, blend together the cream of chicken soup, evaporated milk, and lemon juice until smooth.
  5. Pour the creamy mixture over the diced chicken and broccoli, stirring until well incorporated.
  6. Transfer this combination into the greased baking dish, spreading it evenly.
  7. Top with shredded cheddar cheese.
  8. In a separate bowl, mix the Italian bread crumbs and grated Parmesan cheese, then sprinkle over the cheese layer.
  9. Lightly spray the top with cooking spray to enhance browning.
  10. Bake uncovered for 25 to 30 minutes, or until bubbly and golden.

Notes

Allow the casserole to sit for a few minutes after baking to set before serving. Consider adding chopped onions or bell peppers for extra flavor.
