A rich and flavorful butter chicken recipe that’s surprisingly easy to make at home, embodying the heart and soul of Indian cuisine.

  • 1 ½ pounds boneless skinless chicken breasts (cut into bite-sized pieces)
  • ½ cup plain 2% or full-fat Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 2 cloves of garlic (grated, about 1 teaspoon)
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • ½ teaspoon turmeric
  • ½ teaspoon coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne
  • ¾1 teaspoon salt and pepper to taste
  • 2 tablespoons butter
  • 1 cup yellow onion (diced)
  • 1 ½ teaspoons garam masala
  • ½ teaspoon ground cumin
  • ½ teaspoon turmeric
  • 1 (8-ounce) can tomato sauce
  • 1 cup half-and-half or cream (room temperature)
  • ½ cup plain 2% or full-fat Greek yogurt (room temperature)

Instructions

  1. Begin by marinating the chicken in Greek yogurt, lemon juice, garlic, ginger, garam masala, cumin, turmeric, coriander, smoked paprika, cayenne, and salt.
  2. Heat a tablespoon of olive oil or butter in a large skillet over medium heat and sauté the marinated chicken until cooked through.
  3. Remove the chicken from the skillet and set it aside.
  4. Melt the butter in the same skillet, then add diced onion, garam masala, turmeric, cumin, salt, and pepper, sautéing until onions soften.
  5. Pour in the tomato sauce and simmer for 5-10 minutes until it thickens.
  6. Stir in the half-and-half or cream gradually while ensuring the heat does not boil the sauce.
  7. Return the chicken to the skillet and gently mix in the Greek yogurt until no white streaks remain.
