Delightful baked crispy chicken tacos filled with shredded chicken and cheese, baked to golden perfection.

Ingredients

  • 2 1/2 cups shredded chicken
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chipotle chili powder (optional)
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • 10 corn tortillas
  • 2 1/2 cups shredded Monterey Jack or Mexican cheese

Instructions

  1. Preheat your oven to 450°F.
  2. Mix together the shredded chicken, smoked paprika, garlic powder, onion powder, chipotle chili powder, and salsa in a large bowl.
  3. Wrap the corn tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
  4. Brush one side of each tortilla with olive oil. Add 2 tablespoons of shredded cheese to half of the tortilla, followed by 1/4 cup of the chicken mixture, and top with 2 more tablespoons of shredded cheese. Fold the tortilla over the filling.
  5. Repeat with the remaining tortillas and arrange in a single layer on a baking sheet.
  6. Bake for 16 minutes, flipping halfway through. Once golden brown, remove from the oven and let them rest for 3 minutes before serving.

Notes

Ensure even spacing on the baking sheet and allow the tacos to rest before serving for easier handling.
