A delightful slow-cooked dish that combines sweet and tangy flavors with tender chicken, vibrant bell peppers, and juicy pineapple.

Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 (20-ounce) can pineapple chunks in 100% juice, undrained
  • 1/4 cup cornstarch
  • 1/3 cup honey
  • 1/3 cup apple cider vinegar
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Cooked rice for serving
  • Sliced green onions for garnish

Instructions

  1. Place the chicken pieces, red and green bell peppers, and the entire can of pineapple (with juice) into your slow cooker.
  2. Season the mixture with a pinch of salt and pepper.
  3. In a separate bowl, whisk together the cornstarch, honey, apple cider vinegar, reduced-sodium soy sauce, ketchup, garlic powder, and ground ginger until smooth.
  4. Pour the sauce over the chicken and vegetables in the slow cooker, ensuring even coating.
  5. Cover the slow cooker and cook on LOW for 3-4 hours or on HIGH for 1.5-2 hours, stirring gently halfway through.
  6. Taste and season further with salt and pepper if needed before serving.
  7. Serve over cooked rice, and garnish with sliced green onions.

Notes

For added heat, consider adding sliced jalapeños or crushed red pepper flakes to the mix. Leftovers taste even better the next day.
