A comforting and creamy crockpot dish featuring tender chicken, broccoli, and rich cheddar cheese over rice.

  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups broccoli florets
  • 2 cups shredded cheddar cheese

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add rice, chicken broth, heavy cream, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir to combine.
  3. Cover and cook on LOW for 240-300 minutes or until chicken is cooked through and rice is tender.
  4. Remove chicken, shred with two forks, and return to the crockpot.
  5. Stir in broccoli and shredded cheese, then cover and cook for another 30 minutes until broccoli is tender and cheese is melted.
  6. Serve warm and enjoy!

Notes

For extra cheesiness, consider adding more cheddar cheese in the last 10 minutes of cooking. Adjust cooking times based on your specific crockpot.
