Delightful tacos filled with savory shredded chicken and roasted poblano peppers, served in crispy tortillas with creamy avocado-jalapeño salsa.

Ingredients

  • Corn tortillas
  • Shredded chicken
  • Poblano peppers, diced
  • Cheese (such as cheddar or Monterey Jack)
  • Avocado
  • Jalapeño
  • Sour cream or yogurt
  • Salt
  • Pepper
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a skillet and sauté diced poblano peppers until tender.
  3. Add shredded chicken, salt, and pepper; mix well.
  4. Place a tortilla on a flat surface, add a portion of the chicken and poblano mixture, and sprinkle with cheese.
  5. Fold the tortilla and place it on a baking sheet.
  6. Repeat with remaining tortillas.
  7. Bake for 15-20 minutes until golden and crispy.
  8. Blend avocado, jalapeño, sour cream, salt, and lime juice until smooth for the salsa.
  9. Serve the tacos warm with avocado-jalapeño salsa.

Notes

Use fresh tortillas for better texture. Adjust spice levels with jalapeños as desired. Enjoy leftovers reheated in the oven.
