Ingredients

Scale
  • 750 grams chicken breast, cut into bite-sized cubes
  • 2 tablespoons soy sauce
  • 1 teaspoon salt

  • 1 teaspoon MSG (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon baking powder
  • 1 egg

  • 45 cloves garlic, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 1 tablespoon chili flakes
  • ½ teaspoon garlic powder (additional)
  • 45 tablespoons butter (additional)
  • 2 tablespoons honey (adjust to taste)
  • 12 tablespoons cornstarch slurry (mix cornstarch with water)
  • Sesame seeds and spring onions for garnish

Instructions

  1. Combine the chicken cubes, soy sauce, salt, white pepper, MSG, garlic powder, onion powder, and egg in a large bowl. Mix well to coat the chicken evenly.

  4. Fry the chicken in batches for 3-4 minutes until lightly golden. Remove and set aside for 1-2 minutes.
  5. Double fry the chicken for another 2-3 minutes until golden brown and crispy. Drain on a paper towel-lined plate.
  6. Melt butter in a separate pan and sauté garlic. Add soy sauce, sesame oil, brown sugar, chili flakes, garlic powder, and honey. Mix until combined.
  7. Add the fried chicken to the sauce and toss to coat.
  8. Serve garnished with sesame seeds and spring onions.

Notes

Use fresh chicken breast for the best texture and flavor. Let the chicken marinate longer for maximum flavor absorption.
