Delicious and comforting creamy white chicken enchiladas made with shredded chicken, cream cheese, and zesty green enchilada sauce.

  • 2 cups shredded cooked chicken
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup green enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Combine the shredded chicken, cream cheese, sour cream, half of the green enchilada sauce, and chopped green onions in a mixing bowl.
  3. Season generously with salt and pepper and mix well until combined.
  4. Spoon some of the chicken mixture onto each tortilla, rolling them up tightly and placing them seam side down in the greased baking dish.
  5. Pour the remaining green enchilada sauce over the filled tortillas.
  6. Sprinkle shredded Monterey Jack cheese over the top of the dish.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.
  8. Serve hot and enjoy!

Notes

For added flavor, consider mixing in spices like cumin or chili powder. Warm the tortillas in a skillet before rolling to prevent cracking.
