A comforting and rich meal featuring seared chicken breasts in a creamy sauce with garlic, sun-dried tomatoes, and fresh spinach.

Ingredients

  • 2 large chicken breasts
  • 2 tbsp olive oil
  • Salt
  • Black pepper
  • 34 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 1 cup spinach
  • 1/3 cup chopped sun-dried tomatoes
  • 1 tsp Italian seasoning
  • Chili flakes
  • Fresh basil (for garnish)

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken breasts and sear until golden brown, about 6-7 minutes per side, until fully cooked. Remove from skillet and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  5. Pour in heavy cream and stir in the freshly grated parmesan cheese, creating a robust sauce.
  6. Fold in the spinach and chopped sun-dried tomatoes, allowing the spinach to wilt slightly.
  7. Return the chicken to the skillet, ensuring each piece is coated in the rich sauce.
  8. Sprinkle with Italian seasoning and chili flakes to taste.
  9. Serve hot, garnished with fresh basil.

Notes

Don’t rush the searing process for a juicy chicken. Adjust seasoning to taste.
