4 boneless, skinless chicken breasts
1 cup of long-grain white rice
2 cups of chicken broth
1 cup of heavy cream
1 medium onion, chopped
2 cloves of garlic, minced
1 cup of frozen peas
1 tablespoon of olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper. Sauté chicken for 5-7 minutes on each side until golden brown. Remove from skillet.
Add chopped onions to the skillet, sauté for about 3 minutes until translucent. Add minced garlic and cook for an additional minute.
Stir in the rice and toast lightly.
Pour in chicken broth, bring to a boil, reduce heat, add the chicken, cover, and simmer for 20 minutes.
After 20 minutes, add heavy cream and frozen peas, stir gently, and cook for another 5 minutes.
Garnish with fresh parsley before serving.
Notes
Serve in a wide, shallow bowl to display the creamy sauce and colorful peas. Pairs well with a garden salad or roasted vegetables.
