A delightful chicken dish featuring a crispy panko crust and a rich Parmesan flavor, perfect for weeknight meals.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 50 g grated Parmesan cheese
  • 50 g panko breadcrumbs
  • 2 eggs
  • 2 tablespoons flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 200°C.
  2. Flatten the chicken breasts and season with salt and pepper.
  3. In a bowl, combine flour, garlic powder, paprika, and Parmesan cheese.
  4. Beat the eggs in another bowl.
  5. Dip each chicken breast in the flour mixture, then in the beaten eggs, and roll in panko breadcrumbs.
  6. Heat olive oil and butter in a skillet over medium heat. Fry the chicken for 2-3 minutes on each side until golden brown.
  7. Transfer the chicken to a baking sheet and bake in the oven for 10-12 minutes until cooked through.

Notes

Avoid overcrowding the skillet when frying; fry in batches for optimal crispiness. Double coat chicken for extra crunch if desired.
