  • 1 pound chicken breast (plant-based chicken can be used for a vegan option)
  • 4 tablespoons butter (use non-dairy butter for a vegan option)
  • 3 cloves garlic (minced)
  • 1 medium onion (yellow or white, chopped)
  • 1 cup heavy cream (coconut milk works as a great dairy-free alternative)
  • 1 cup chicken broth (vegetable broth for vegetarian offering)
  • 1/2 cup Parmesan cheese (nutritional yeast can be used for a vegan option)
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Start by prepping your workspace. Rinse and chop the onion and garlic. Slice the chicken into bite-sized pieces. Prepare the pasta according to package instructions, reserving a splash of the starchy pasta water.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the chicken pieces, seasoning them with salt and pepper. Cook until golden brown and no longer pink, about 6-8 minutes.
  5. Pour in the chicken broth and bring it to a simmer. Allow it to reduce slightly before adding the cream or coconut milk.
  6. Stir in the Italian seasoning, red pepper flakes, and Parmesan cheese. If the sauce is too thick, add some reserved pasta water.
  7. Combine the pasta with the sauce, tossing thoroughly to coat. Serve hot, garnished with fresh parsley.

Notes

Store leftovers in an airtight container for up to three days. Reheat in a skillet with a splash of broth or pasta water.
