A rich and creamy coconut chicken curry that brings together tender chicken, aromatic spices, and a delightful coconut milk sauce, perfect for any occasion.

  • 2 tablespoons olive oil
  • 1 pound chicken thighs (or breasts), cut into bite-sized pieces
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 can (14 ounces) coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and grated ginger and cook for about 1 minute.
  4. Add the chicken pieces and cook until browned.
  5. Sprinkle in the curry powder and mix well.
  6. Pour in the coconut milk and chicken broth; stir to combine.
  7. Bring to a simmer, cover, and cook for 15 minutes or until the chicken is cooked through.
  8. Season with salt and pepper to taste.
