  • 4 bell peppers, halved
  • 2 cups shredded chicken breast
  • 8 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded, plus 1 cup for topping
  • 1/4 cup scallions, chopped
  • 1/2 cup salsa verde

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together the shredded chicken, softened cream cheese, 1 cup of cheddar cheese, scallions, and salsa verde until well combined.
  3. Fill each halved bell pepper with the chicken mixture until full.
  4. Arrange the stuffed peppers in a baking dish. Sprinkle additional cheddar cheese on top.
  5. Cover the dish with foil and bake for 25-30 minutes.
  6. Uncover the dish and bake for an additional 5-10 minutes, allowing the cheese to turn golden brown.
  7. Serve the creamy chicken stuffed peppers warm.
