A warm and comforting chicken noodle soup inspired by the flavors and aromas of a beloved café.

  • 1 rotisserie chicken, shredded
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions, minced garlic, sliced carrots, and sliced celery, and sauté until tender.
  2. Pour in the chicken broth and bring to a boil.
  3. Add the egg noodles and cook according to the package instructions.
  4. Stir in the shredded chicken, dried thyme, salt, and black pepper, and let simmer for about 5 minutes.
  5. Garnish each serving with fresh parsley if desired, and serve warm.

Notes

For a heartier soup, consider adding potatoes or spinach. Adjust saltiness by adding more chicken broth or carrots if needed.
