Ingredients

  • 1 lb chicken breast
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 2 lemons, juiced
  • 2 cups spinach
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Combine the chicken breast, chopped onion, diced carrots, diced celery, and chicken broth in a large pot.
  2. Bring the mixture to a boil over medium-high heat.
  3. Lower the heat and let it simmer until the chicken is fully cooked, about 20 minutes.
  4. Remove the chicken from the pot and shred it.
  5. Return the shredded chicken back into the pot.
  6. Add the orzo pasta and cook until tender, approximately 8-10 minutes.
  7. Stir in the lemon juice and spinach, seasoning with salt and pepper to taste.
  8. Serve hot, garnished with fresh dill.
