Chinese peanut butter chicken combines rich peanut flavors with tender chicken, creating a comforting yet exciting dish that’s easy to master.

  • 1 pound boneless chicken thighs
  • 1/2 cup peanut butter (plus 1 tablespoon for egg wash)
  • 1/4 cup sweetened condensed milk
  • 2 teaspoons soy sauce
  • 1/3 cup water
  • 3 large eggs
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 2 cups panko breadcrumbs

Instructions

  1. Blend the peanut butter, sweetened condensed milk, soy sauce, and water until creamy.
  2. Flatten the chicken thighs to about 1/2-inch thickness using a meat mallet.
  3. Whisk together the eggs, flour, salt, and 1 tablespoon of peanut butter until smooth in a shallow dish.
  4. Pour panko breadcrumbs into another dish.
  5. Dredge each piece of chicken in the egg wash, then coat with breadcrumbs.
  6. Heat oil to 350°F in a frying pan and fry the chicken for 2-3 minutes on each side until golden brown.
  7. Transfer to a wire rack to drain excess oil, then slice and drizzle with the creamy peanut sauce before serving.

Notes

Make sure the oil temperature is consistent to avoid greasy chicken. Consider double-dipping for an extra crispy texture.
