Chinese Lemon Chicken

A delightful dish combining crispy chicken with a tangy, sweet lemon sauce that quickly becomes a family favorite.

Ingredients

  • 1 lb chicken thighs, cut into cubes
  • 1 tbsp soy sauce
  • 2 tbsp cornstarch (for marinating)
  • 1/3 cup lemon juice
  • 3 tbsp sugar
  • 1/2 cup water
  • 2 tsp cornstarch (for sauce)
  • 1 tsp lemon zest
  • 1/4 cup flour
  • 1/2 cup cornstarch (for coating)
  • Oil for frying

Instructions

  1. Top the cubed chicken with soy sauce and 2 tablespoons of cornstarch in a bowl. Cover and let it marinate for 30 minutes.
  2. While waiting, whisk together lemon juice, sugar, water, the remaining cornstarch, and lemon zest in a small bowl. Set aside.
  3. After marinating, combine flour and 1/2 cup of cornstarch with the chicken. Toss to coat.
  4. In a deep pot, heat oil to 350°F (about three inches deep).
  5. Fry the chicken in batches, avoiding crowding the pot.
  6. Cook until golden brown, then transfer to a skillet.
  7. Once all chicken is fried, turn off the oil and heat the skillet on medium-high. Add sauce to chicken, gently coating each piece, and cook until sauce thickens.
  8. Serve immediately alongside steamed rice and vegetables.

Notes

For enhanced flavor, consider adding fresh garlic or ginger during marination. Shake off excess flour and cornstarch when coating the chicken.
