A flavorful Mexican dish featuring tender shredded chicken in a smoky chipotle sauce, perfect for serving on tostadas or in tacos.

  • 1 lb chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 23 chipotle chiles in adobo sauce
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tostadas or tortillas for serving

Instructions

  1. Begin by boiling the chicken breasts in a pot until they’re cooked through.
  2. Once cooked, carefully shred the chicken and set it aside.
  3. In the same pot, sauté the onion and garlic until they become translucent.
  4. Next, add the diced tomatoes, chipotle chiles, cumin, and the shredded chicken to the pot.
  5. Season your mix with salt and pepper to taste, allowing it to simmer for about 10 minutes.
  6. When ready, serve the chicken tinga on tostadas, in tacos, or as a filling for quesadillas and enchiladas.

Notes

Adjust the level of chipotle chiles to your taste for a milder flavor. Serve with fresh cilantro as a garnish.
