Delicious and easy-to-make chicken tinga tacos featuring a flavorful blend of chicken, chipotle peppers, and spices, served in warm tortillas.

  • 2 cups shredded cooked chicken
  • 1 can Red Gold Tomatoes (diced or crushed)
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 23 chipotle peppers in adobo sauce, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn or flour tortillas
  • Toppings: avocado, cilantro, lime, diced onion

Instructions

  1. Heat some oil in a skillet over medium heat and sauté the sliced onion until translucent.
  2. Add the minced garlic and cook for another minute.
  3. Stir in the shredded chicken, Red Gold Tomatoes, chipotle peppers, cumin, oregano, salt, and pepper. Simmer for about 15-20 minutes until heated through and flavors meld.
  4. Warm the tortillas in a separate pan or microwave.
  5. Assemble the tacos by placing the chicken tinga mixture on the tortillas and adding your favorite toppings. Serve immediately.

Notes

For added flavor, allow the chicken tinga mixture to simmer longer. Adjust spice levels with chipotle peppers; serve with fresh lime for a zesty touch.
