A vibrant Mexican chicken dish featuring smoky chipotle peppers and tangy tomatoes that creates a comforting meal perfect for any gathering.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 23 chipotle peppers in adobo sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Tortillas or tostadas for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Combine chicken breasts with chipotle peppers, diced tomatoes, cumin, oregano, salt, and pepper.
  5. Add enough water to cover the chicken and bring to a boil.
  6. Reduce heat to low and simmer for 20-25 minutes, or until the chicken is cooked through.
  7. Remove the chicken, shred it with two forks, and return it to the pot, mixing well with the sauce.
  8. Serve it on tortillas or tostadas, garnished as desired.

Notes

Experiment with the number of chipotle peppers to adjust the spiciness to your liking. For extra flavor, add fresh cilantro and lime juice after serving.
