A comforting and hearty chicken soup filled with shredded chicken, ditalini pasta, and aromatic vegetables.

Ingredients

  • 2 cups shredded chicken
  • 1 cup ditalini pasta
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, diced carrots, diced celery, and minced garlic.
  3. Sauté until the vegetables are tender.
  4. Stir in the shredded chicken.
  5. Pour the chicken broth into the pot and bring to a boil.
  6. Add the ditalini pasta and dried thyme.
  7. Reduce the heat and let the soup simmer until the pasta is cooked, about 10 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

Serve with fresh herbs or a sprinkle of cracked pepper. Keeps well in the fridge for 4 days or freezes well in portions.
