A delightful chicken scampi served with creamy garlic parmesan rice, perfect for impressing family and friends.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 3 tablespoons butter
  • 4 garlic cloves, minced (divided)
  • ½ cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter (for rice preparation)
  • 1 cup white rice
  • 2 cups chicken broth (for the rice)
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Season the chicken breasts with salt, black pepper, and paprika.
  2. In a large skillet, heat olive oil over medium heat. Sear the chicken breasts for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. Lower the heat and add butter along with half of the minced garlic. Sauté for 1–2 minutes until fragrant.
  4. Pour in chicken broth and lemon juice. Scrape the bottom of the skillet to deglaze. Add lemon zest and simmer for 3–4 minutes.
  5. Return the chicken to the pan, spooning sauce over it. Simmer for another 2–3 minutes.
  6. In a medium saucepan, melt butter over medium heat. Add the remaining minced garlic and sauté briefly.
  7. Stir in white rice and toast for about 1 minute.
  8. Add the chicken broth to the rice, bringing it to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  9. Remove sauce from heat and stir in parmesan cheese and chopped parsley.

Notes

Let the chicken rest for a few minutes after cooking for the best texture. Use fresh ingredients for enhanced flavor.
