A comforting and indulgent dish featuring chicken scampi served on a bed of creamy garlic parmesan rice.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups rice
  • 4 cups chicken broth
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian herbs (or mixed dried herbs)
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt and pepper and add them to the skillet.
  3. Cook until golden brown and fully cooked, about 5-7 minutes on each side.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté until fragrant, about 1-2 minutes.
  6. Add rice to the skillet and toast for 1-2 minutes.
  7. Pour in the chicken broth and bring to a boil.
  8. Reduce heat, cover, and let it simmer until the rice is cooked, about 18-20 minutes.
  9. Once the rice is done, stir in heavy cream and parmesan cheese.
  10. Mix well and add Italian herbs for extra flavor.
  11. Return the chicken to the skillet; stir to combine and heat through.
  12. Serve garnished with fresh parsley.

Notes

Allow the chicken to rest before slicing to retain moisture. Adjust seasoning and herbs to taste.
