A comforting dish featuring crispy chicken katsu served over fluffy rice and topped with rich Japanese curry.

Ingredients

  • 2 Chicken breasts
  • 1 cup Panko breadcrumbs
  • Salt, to taste
  • Pepper, to taste
  • 1 Egg, beaten
  • 1 cup Flour
  • Vegetable oil, for frying
  • 2 Medium-sized Potatoes, peeled and diced
  • 2 Carrots, peeled and diced
  • 1 package Japanese curry mix
  • 2 cups Medium-grain rice
  • Water for cooking vegetables and curry

Instructions

  1. Prepare the rice according to package instructions.
  2. Season the chicken breasts with salt and pepper.
  3. Dredge the chicken in flour, dip in beaten egg, and coat with panko breadcrumbs.
  4. Heat vegetable oil in a frying pan over medium heat.
  5. Fry the chicken until golden brown and cooked through.
  6. Peel and dice the potatoes and carrots, cook them until tender.
  7. Add the Japanese curry mix and water to the pot with the vegetables and let it simmer until thickened.
  8. Serve the crispy chicken on top of the rice and pour the curry sauce over it.

Notes

For optimal texture, ensure oil is hot enough before frying. Use leftover vegetables for added flavor, and adjust curry mix to taste.
