A delicious Chicken Gyro Bowl featuring marinated chicken, fresh veggies, and creamy tzatziki that delivers vibrant flavors and a satisfying meal.

  • 1 lb boneless chicken thighs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Pita bread, for serving
  • Cucumber, diced
  • Tomatoes, diced
  • Red onion, thinly sliced
  • Tzatziki sauce, for serving
  • Lettuce, for an extra crunch

Instructions

  1. Marinate the chicken: In a bowl, combine the olive oil, minced garlic, oregano, salt, and pepper. Add the chicken thighs and make sure they get coated evenly. Allow the chicken to marinate for at least 30 minutes.
  2. Cook the chicken: Grill or sauté the marinated chicken until fully cooked, around 6-7 minutes per side, depending on thickness. Once cooked, slice the chicken into bite-sized pieces.
  3. Prepare the tzatziki sauce: In a separate bowl, mix yogurt with grated cucumber, minced garlic, lemon juice, and dill. Blend until smooth and creamy.
  4. Assemble the bowl: In serving dishes, arrange the sliced chicken, diced cucumbers, tomatoes, red onion, and a handful of lettuce. Add a generous dollop of tzatziki sauce on top.
  5. Serve: Warm the pita bread and place it alongside the bowls for a complete meal.

Notes

For enhanced flavor, try adding fresh herbs like dill or parsley to the marinade. Allow the chicken to rest for a few minutes after cooking to make each bite juicier.
