  • 1 can refrigerated biscuit dough
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a large pot over medium heat. Add a drizzle of oil and sauté the diced onion, carrot, and celery until softened.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken broth and bring the mixture to a gentle simmer.
  4. Stir in the shredded rotisserie chicken and dried thyme. Season with salt and pepper to your liking.
  5. Chop the biscuit dough into small pieces and drop them into the simmering soup. Cook for about 10 minutes until the dumplings are fully cooked.
  6. Pour in the heavy cream, allowing it to blend seamlessly with the soup. Let it simmer for another 5 minutes.
  7. Garnish with fresh parsley before serving.
