A delicious and hearty weeknight meal featuring chicken apple sausage roasted with vibrant vegetables and drizzled with maple syrup.

  • 4 chicken apple sausages
  • 24 oz baby potato medley
  • 1 cup baby carrots
  • 2 small or 1 large broccoli crown
  • 3 tbsp olive oil
  • 3 tbsp pure maple syrup
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F.
  2. Chop the baby potatoes and broccoli into bite-sized pieces. Slice the chicken sausage into rounds.
  3. Toss the chopped potatoes and carrots with 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, paprika, salt, and pepper in a large bowl.
  4. Spread the potato and carrot mixture on a large sheet pan.
  5. Roast for 20 minutes, mixing halfway through to ensure even cooking.
  6. Mix chopped broccoli with 1 tablespoon of olive oil, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, salt, and pepper in a separate bowl.
  7. After 20 minutes, move the potatoes and carrots to one side and add the broccoli to the pan; roast for an additional 10 minutes.
  8. Add the sliced chicken sausage to the pan and roast for another 20 minutes, mixing halfway through to promote even cooking.
  9. Drizzle maple syrup over all ingredients and mix gently. Roast for another 10 minutes until everything caramelizes beautifully.
  10. Serve hot and enjoy.

Notes

For maximum flavor, use fresh baby potatoes and vegetables. Don’t skip the maple syrup drizzle at the end for added sweetness.
