Ingredients

Scale
  • 3 Tbsp. olive oil
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 4 celery stalks, diced
  • 4 large carrots, diced
  • 12 cups water
  • 1 whole chicken (about 56 lbs.)
  • 2 chicken bouillon cubes
  • 2 bay leaves
  • 4 Tbsp. fresh parsley
  • 2 1/2 cups egg noodles
  • 1/4 tsp. salt (to taste)
  • 1/4 tsp. pepper (to taste)

Instructions

  1. Mince the garlic and chop the onion for a fragrant base.
  2. Dice the celery and large carrots to add texture and flavor.
  3. Heat 3 Tbsp. of olive oil in a large heavy-bottomed soup pan or Dutch oven.
  4. Add the minced garlic, onions, diced celery, and carrots along with a pinch of salt and pepper.
  5. Sauté the mixture until softened, about 5-6 minutes.
  6. Pour in 12 cups of water and add the whole chicken, ensuring the water covers the chicken entirely.
  7. Bring the soup to a boil.
  8. Once boiling, reduce the heat to low and let it simmer for 120 minutes.
  9. Remove the chicken from the pot and let it cool slightly.
  10. Shred the chicken meat, discarding bones, cartilage, and skin.
  11. Return the shredded chicken back to the soup pot.
  12. Add 2 chicken bouillon cubes, 2 bay leaves, and 4 Tbsp. of fresh parsley.
  13. Bring the soup to a boil again.
  14. Once boiling, lower the heat and add 2 1/2 cups of egg noodles.
  15. Simmer for an additional 30 minutes.
  16. Season with more salt and pepper to taste before serving.

Notes

For added flavor, use skin-on and bone-in chicken. Adjust seasonings throughout the cooking process and consider adding a pinch of cayenne pepper for a kick!
