A flavorful and satisfying casserole combining shredded chicken, black beans, corn, salsa, and cheese.

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 package taco seasoning
  • 6 corn tortillas, cut into strips
  • 1/2 cup chopped green onions (for garnish)
  • Sour cream (optional, for serving)

Instructions

  1. Combine the shredded chicken, black beans, corn, salsa, taco seasoning, and half of the cheese in a large mixing bowl.
  2. Layer half of the cut tortilla strips at the bottom of the prepared baking dish.
  3. Spread half of the chicken mixture evenly over the tortilla strips.
  4. Repeat the layering process with the remaining tortilla strips and chicken mixture.
  5. Top the casserole with the remaining cheese to achieve a golden crust.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Sprinkle with chopped green onions and serve with sour cream if desired.

Notes

For a spicier version, consider adding jalapeños or customizing with bell peppers. Assemble a day in advance for convenience.
