A flavorful one-skillet dish combining tender chicken, broccoli, and creamy orzo pasta, perfect for a comforting family meal.

  • 1 cup orzo pasta
  • 1 lb boneless, skinless chicken breast, diced
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup milk (whole or 2%)
  • 1 cup shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced chicken and season with salt, pepper, and paprika. Cook for 5-6 minutes until golden brown and fully cooked. Remove chicken and set aside.
  2. In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Stir in the orzo and toast in the oil for 1 minute.
  3. Pour in the chicken broth and milk, bring to a simmer, and cook for 7-8 minutes, stirring occasionally.
  4. Add broccoli florets and cook for an additional 3-4 minutes until tender and creamy.
  5. Lower the heat, add the cheddar cheese, and stir until melted. Return the chicken to the skillet and combine. Adjust seasoning if necessary.
  6. Garnish with parsley and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently adding a splash of milk for creaminess.
