  • 1/2 teaspoon hot sauce

  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375 degrees.
  2. Combine the bell peppers, red onion, diced potato, and spicy chicken sausages on a baking sheet.
  3. Season the mixture generously with Cajun seasoning, drizzle over olive oil, and toss to coat evenly.
  4. Spread the mixture on the baking sheet ensuring even spacing.
  5. Bake in the preheated oven for about 30 minutes.
  6. Prepare the creamy Cajun sauce by combining mayo, water, hot sauce, a drizzle of olive oil, and a pinch of Cajun seasoning in a bowl.
  7. Mix until smooth.
