  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 ounces linguine pasta
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cups fresh spinach
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with Cajun seasoning, salt, and black pepper, and let sit for 10 minutes.
  2. Cook the linguine in a pot of boiling salted water until al dente, reserving ½ cup of pasta water before draining.
  3. Sauté the chicken in olive oil over medium-high heat for 4-5 minutes on each side until cooked through. Let rest.
  4. Create the creamy sauce by sautéing garlic in the same skillet, then adding heavy cream and simmering. Stir in Parmesan until melted, adding reserved pasta water as needed for consistency.
  5. Combine the sliced chicken with drained linguine, tossing with the creamy sauce and folding in spinach until wilted.
  6. Serve warm, garnished with parsley.
