Butter chicken is a rich and creamy Indian dish that combines marinated chicken with a flavorful tomato-based sauce, creating a delightful meal that warms hearts and fills bellies.

  • 2 chicken breasts (250g)
  • 45 roma tomatoes (or canned peeled tomatoes)
  • 1 large red onion
  • 45 cloves of garlic
  • 3/4 cup cream (10% recommended)
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 2 tsp kashmiri red chili powder
  • 1 tbsp sugar
  • 2 tbsp dried fenugreek leaves
  • 2 tbsp yogurt
  • 1 tsp garam masala (for the sauce)
  • 0.5 tsp turmeric (for the sauce)
  • 0.5 tsp cumin (for the sauce)
  • 0.5 tsp coriander powder (for the sauce)
  • 1 tsp kashmiri red chili powder (for the sauce)
  • 2 tbsp oil (for frying)

Instructions

  1. Chop the chicken breasts into bite-sized cubes.
  2. Marinate the chicken with garam masala, turmeric, cumin, coriander powder, kashmiri red chili powder, and yogurt for about an hour.
  3. Air fry the marinated chicken for 12 minutes at 380°F (193°C).
  4. Meanwhile, chop the red onion and tomatoes roughly.
  5. Heat 2 tablespoons of oil in a pan over medium heat. Add the minced garlic and chopped onions. Cook for a few minutes until the onions soften and become translucent.
  6. Add the chopped tomatoes and a splash of water. Cover the pan and cook for 4-5 minutes, allowing the tomatoes to soften.
  7. Once soft, blend the mixture until smooth and return it to the pan.
  8. Add the remaining spices, sugar, dried fenugreek leaves, and cream. Mix everything well to create a rich base.
  9. Add the cooked chicken to the creamy sauce and stir until everything is well coated.
  10. Serve hot and enjoy your delicious butter chicken!

Notes

For added flavor, consider adding a cinnamon stick while simmering the sauce. Adjust spices according to personal heat preference.
