A delicious fusion of sweet potatoes and spicy buffalo sauce, this casserole is perfect for weeknight meals or gatherings.

  • 1 cup cooked chicken, shredded
  • 1 cup broccoli, chopped
  • 1/2 cup onion, diced
  • 4 strips bacon, cooked and crumbled
  • 1/2 cup buffalo sauce
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potato, then boil until tender, about 10 minutes.
  3. In a large bowl, combine the cooked sweet potato, shredded chicken, broccoli, onion, bacon, and buffalo sauce. Mix well to combine.
  4. Transfer the mixture to a greased casserole dish and spread it evenly.
  5. If desired, sprinkle cheese on top.
  6. Bake for 20-25 minutes or until heated through and bubbly.
  7. Let it cool slightly before serving.

Notes

Taste your buffalo sauce before adding it; adjust based on your heat preference. You can also add crushed tortilla chips for extra crunch.
