8 skinless and boneless chicken thighs, cut into 1-inch pieces
2 tbsp cornstarch
½ tsp salt
½ tsp pepper
2 tbsp vegetable oil
1 tbsp unsalted butter
4 cloves minced garlic
110g (1/3 cup) honey
80ml (1/3 cup) chicken stock
1 tbsp rice vinegar
1 tbsp light soy sauce
1 tbsp finely chopped fresh parsley
½ tsp chili flakes
Boiled rice (for serving)
Instructions
Pat the chicken thighs dry, then cut them into uniform 1-inch pieces. Season them evenly with salt and pepper.
Combine honey, chicken stock, rice vinegar, and light soy sauce in a separate bowl. Stir in minced garlic.
Whisk 2 tbsp cornstarch with 2 tbsp cold water until smooth and set it aside for later.
Heat vegetable oil in a large skillet over medium-high heat. Add in the chicken (cook in batches if needed) and sear for 3-4 minutes on each side until golden brown and fully cooked. Remove the chicken and set it aside.
Reduce heat to medium-low and add unsalted butter to the skillet. Pour in the honey garlic mixture and bring it to a gentle simmer.
Whisk in the cornstarch slurry, cooking for 1-2 minutes until the sauce thickens.
Return the cooked chicken to the pan and toss gently to coat each piece with the sauce. Let it simmer for another minute.
Garnish with fresh parsley and sprinkle chili flakes on top. Serve warm with boiled rice.
Notes
For thicker sauce, add more cornstarch. Customize flavors by adding vegetables or herbs.
