Delicious BBQ chicken bowls featuring roasted sweet potatoes, juicy chicken, and homemade coleslaw, topped with zesty pickles.

Ingredients

  • 4 Chicken breasts
  • 1 cup BBQ sauce
  • 2 Sweet potatoes, cubed
  • 1/2 head Cabbage (for coleslaw)
  • 2 Carrots (for coleslaw)
  • 1/2 cup Mayonnaise (for coleslaw)
  • 2 tbsp Vinegar (for coleslaw)
  • Pickles to taste
  • Salt to taste
  • Pepper to taste
  • 2 tbsp Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut sweet potatoes into cubes, toss with olive oil, salt, and pepper, and roast in the oven for 20-25 minutes until tender.
  3. Meanwhile, cook chicken breasts in a skillet over medium heat until cooked through, about 6-7 minutes per side. Brush with BBQ sauce during the last few minutes of cooking.
  4. For the coleslaw, shred cabbage and carrots, mix with mayonnaise, vinegar, salt, and pepper to taste.
  5. Assemble the bowls by layering sweet potatoes, sliced BBQ chicken, coleslaw, and top with zesty pickles. Serve and enjoy!

Customize your coleslaw with additional veggies or nuts. Experiment with different types of pickles for unique flavors.
