Baked Tuscan Chicken Casserole

A flavorful and creamy casserole featuring tender chicken breasts, a rich cheese mixture, sun-dried tomatoes, and fresh spinach, perfect for weeknight dinners.

  • 2 large chicken breasts, halved horizontally
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tbsp oil from the sun-dried tomato jar
  • 1 1/2 cups fresh spinach, roughly chopped

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a baking dish.
  2. Season the halved chicken breasts generously with salt, pepper, and garlic powder.
  3. Blend the softened cream cheese and heavy cream in a bowl until smooth.
  4. Mix in the onion powder, paprika, Italian seasoning, grated Parmesan cheese, and half of the shredded mozzarella cheese until well combined.
  5. Arrange the seasoned chicken breasts in the prepared baking dish and pour the cream mixture over the top. Drizzle the oil from the sun-dried tomatoes over everything.
  6. Add the chopped sun-dried tomatoes evenly over the chicken and cream mixture. Cover the dish with foil and bake for 20 minutes.
  7. After 20 minutes, remove the foil, sprinkle in the roughly chopped spinach, and top with the remaining mozzarella cheese. Bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.

Notes

For a richer casserole, increase the cream components, but balance with the sun-dried tomatoes. Leftovers store well in an airtight container for up to 3 days.
