A vibrant and zesty baked chicken dish that combines fresh orange juice with soy sauce for an exotic yet comforting meal.

  • 1 ½ lbs boneless, skinless chicken breasts or thighs
  • ½ cup freshly squeezed orange juice
  • 1 tablespoon orange zest
  • ¼ cup low-sodium soy sauce
  • ¼ cup honey or brown sugar
  • 1 tablespoon fresh ginger, minced
  • 2 cloves fresh garlic, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons vinegar (rice vinegar or apple cider vinegar)
  • 1 tablespoon sesame oil (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut your chicken into bite-sized pieces and season with salt and pepper.
  3. Place the chicken on the prepared baking sheet and bake for 20-25 minutes until golden brown and fully cooked.
  4. While the chicken is baking, prepare the sauce by combining orange juice, orange zest, soy sauce, honey or brown sugar, minced garlic, minced ginger, and vinegar in a saucepan. Simmer gently.
  5. Mix cornstarch with water to create a slurry, then add to the sauce to thicken.
  6. Once the chicken is done, combine it with the sauce in a bowl, ensuring it is well-coated. Drizzle with sesame oil if desired and serve warm.

Notes

For best results, allow the chicken to marinate in the sauce for an hour before baking.
