A comforting dish of juicy dark meat chicken baked in a rich lemon butter sauce, perfect for gatherings and memorable meals.

  • 10 dark meat chicken pieces (drumsticks and thighs recommended)
  • 2 tsp kosher salt
  • 1 tbsp smoked paprika
  • 1 tbsp Montreal chicken seasoning blend
  • 2 tbsp butter
  • 1/2 cup red onion (minced)
  • 1/2 cup flat-leaf parsley (chopped)
  • 1 tbsp garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Trim excess fat from the chicken pieces.
  3. Melt the butter in a skillet over medium heat and sauté the minced red onion for about 2 minutes until fragrant.
  4. Add the chopped parsley, minced garlic, fresh lemon juice, and red pepper flakes, stirring to combine.
  5. Pour in the chicken stock and combine with the Parmesan cheese, then stir in the heavy cream. Simmer the sauce for about a minute before turning off the heat.
  6. Season the chicken with kosher salt, smoked paprika, and chicken seasoning.
  7. Pour the sauce over the seasoned chicken in a baking dish.
  8. Bake uncovered for 1 hour and 45 minutes, flipping the chicken halfway through.
  9. Broil on the skin side until golden brown, basting with sauce before serving.
